Phase 1 - Bud-burst
(September–October in the Southern Hemisphere & March–April in the Northern Hemisphere)
As winter ends and temperatures rise, grapevines awaken from dormancy, marking the start of a new growing season.
This phase, known as bud-burst, is when tiny buds on the vine begin to swell and eventually break open, revealing the first signs of new growth.
The temperature required for bud-burst varies depending on the grape variety.
Phase 2 – Leaf Growth
(September–November in the Southern Hemisphere & March–May in the Northern Hemisphere)
Following bud-burst, the vine rapidly develops leaves, which play a crucial role in photosynthesis—the process where sunlight is converted into energy for the vine. Healthy leaf growth is essential for producing high-quality grapes, as the leaves generate the sugars needed for fruit development.
Phase 3 – Flowering & Fruit Set
(November–December in the Southern Hemisphere & May–June in the Northern Hemisphere)
As spring turns to early summer, vines begin to flower. Tiny, delicate blossoms appear, each with the potential to become a grape. This stage is critical, as the success of flowering directly affects the size of the harvest.
Not all flowers will develop into fruit—weather conditions like rain, strong winds, or extreme heat can cause poor fruit set, reducing the final yield.

The berries soften, sugar levels rise, and acidity gradually decreases, setting the stage for a beautifully balanced harvest.

Phase 5 - Harvest (Vendange)
(March-April in the Southern Hemisphere & September-October in the Northern Hemisphere)
Autumn is when the harvest takes place, with grapes reaching their full ripeness and being carefully picked.
This marks the transition from the growing season to the winemaking process.
During this time, the vines are in their final push before dormancy, and the flavours in the fruit reach their peak.
A dry harvest period is ideal, as excess rainfall before picking can cause the grapes to swell, diluting their juice and increasing the risk of rot in damp conditions.
That’s why timing is everything—winemakers and vineyard teams monitor sugar levels, acidity, and tannins to determine the perfect moment to bring in the fruit.
Winter Comforts: Bold Reds for Cozy Nights
Phase 6 - Dormancy (Hibernation)
(June-September in the Southern Hemisphere & December-March in the Northern Hemisphere)
As winter sets in, the vineyard enters a period of rest and renewal.
The vines slip into dormancy, conserving energy and preparing for the next growing season.
With the chill in the air, it’s the perfect time to embrace bold, comforting winesthat warm both body and soul.
At this stage, the growing season officially ends.
The once-green shoots harden and become woody canes, while the leaves turn golden, then fall to the ground.
Beneath the surface, the vine stores carbohydrates in its roots, ensuring it has the strength to bud again when spring returns.
Though the vineyard may seem quiet, this hibernation phase is essential—allowing the vines to reset and ensuring the health and quality of the next vintage.
