Terroir:The 60-year-old vines for Les Mondes 2020 are rooted in sandy, clay-gravel soils layered over schist. This unique terroir, combined with deep plowing practices, promotes resilient vines that thrive even in extreme water conditions. The Loire Valley's temperate climate ensures a balanced ripening process for these rare and local grape varieties.
Winemaking: The grapes are manually harvested in 12 kg perforated crates, ensuring careful handling. A negative sorting process removes less-than-perfect bunches days before harvest, focusing the vine’s energy on the healthiest clusters.
Maceration: A short 36-hour whole-berry maceration followed by saignée.
Fermentation: Occurs in stainless steel tanks with indigenous yeasts. Malolactic fermentation adds roundness.
Aging: 6 months in amphora, enhancing purity and minerality.
