Terroir: The 45-year-old Chenin Blanc vines of L'Ame de Fond are grown in soils of sand and gravel over schist, providing excellent drainage and fostering deep root growth. The vineyard’s meticulous care—via practices like simple Guyot pruning, leaf stripping, and soil work—ensures that the vines thrive in varying conditions, allowing them to better resist both drought and excess water.
Harvest: Hand-harvested in small 12kg perforated crates to preserve the quality of the grapes, L'Ame de Fond 2020 undergoes both a negative sorting to remove any damaged or unripe bunches and a second positive sorting at harvest to ensure only perfectly ripe, healthy fruit is selected. This careful attention to detail ensures that the wine reflects the full potential of the vintage.
Winemaking: Direct pressing of the whole grapes.
Fermentation: In stainless steel vats with the use of indigenous yeasts. After fermentation, the wine undergoes malolactic fermentation to round out the mouthfeel. 
Aging: The wine is then aged for 12 months in a combination of 2/3 barrels and 1/3 amphora, which imparts additional texture and complexity while preserving the freshness and purity of the fruit.
