Terroir: The vineyards are located in Mareuil-sur-Aÿ, a Premier Cru village in Champagne. The vines are 40 years old, grown from massal selections. The soil is a mix of light clay-limestone with a chalk subsoil, ideal for preserving freshness and minerality in the grapes.
Fermentation: This Blanc de Noirs is crafted with spontaneous fermentation (no added yeasts) to highlight the natural expression of the terroir.
Vinification: 95% in stainless steel tanks, preserving fruit purity and freshness.
5% in oak barrels, contributing subtle complexity and texture.
Aging: 10 months on lees after the first fermentation, enhancing depth and roundness.
Four years aging on lees in bottle, providing fine bubbles and a creamy texture
Dosage: The wine is Extra Brut, with a dosage of 1 to 4 g/L, ensuring a dry, crisp profile that emphasises purity and minerality.

On the Nose: This Champagne offers a bouquet of red berry fruits, such as wild strawberries and raspberries, combined with notes of brioche, citrus, and subtle hints of spice from its oak-aged component.
On the Palate: Expect an elegant balance of vibrant acidity, delicate red fruit flavours, and a chalky minerality. The long lees aging lends a creamy mousse, while the low dosage keeps the finish fresh and precise.
Pairing & Cellaring: This wine pairs beautifully with Oysters, scallops, or sashimi. Grilled chicken or veal with light sauces. Fresh chèvre or aged Parmesan.
Serve at 10°C to 12°C for optimal enjoyment.
