Terroir: This cuvée comes from carefully selected parcels: Les Vignes du Feuilly (Avenay-Val-d'Or) – 90% Pinot Noir, planted in deep clay-limestone soils over a chalk subsoil, facing East.
Les Sept Arpents (Mareuil-sur-Aÿ) – 10% Chardonnay, with shallow clay-limestone soils over a chalk subsoil, facing South-East.
Both areas provide the balance of freshness and fruit complexity required for this top-tier Champagne.
Fermentation: 75% of the wine is fermented in stainless steel to preserve the purity and freshness of the fruit.
25% is fermented in oak barrels, adding depth and complexity to the final blend. Spontaneous fermentation is used, allowing the natural yeasts to impart terroir-driven characteristics.
Aging: Aged on lees for 10 months after fermentation, contributing to texture and complexity.
This wine was aged for 5 years on lees before disgorging, enhancing its depth and finesse.
Dosage: This Champagne is zero dosage (no added sugar), which means it is very dry and emphasises the natural purity and minerality of the grapes.
Tasting Notes / Food Pairing & Cellaring
On the Nose: The nose is vibrant, showcasing aromas of red fruits (strawberry, cherry), with subtle brioche and hazelnut hints from the oak aging and lees contact.
On the Palate: Expect a structured, full-bodied Champagne with a creamy mousse and lively acidity. The Pinot Noir provides power and depth, while the Chardonnay contributes freshness and elegance. The extended lees aging lends a rich, complex mouthfeel with flavours of citrus, stone fruit, and a mineral finish.
Pairing & Cellaring: This wine pairs beautifully with: Oysters, crab, or lobster. Roasted chicken or guinea fowl. Soft cheeses such as Brie or Camembert.
Serve between 10°C and 12°C. It may benefit from decanting to fully reveal its nuances, and it should be opened ahead of time to allow it to breathe.
