Terroir: The vines are grown on high terraces facing north, deeply rooted in the rocky schist bedrock of Faugères. The terroir imparts unique qualities to the wine, contributing to its mineral character and complexity.
Harvest: The grapes are carefully selected from terraces and sloping hillside vineyards with a northern exposure, ensuring optimal ripeness and freshness. Hand-harvested in small crates, the yields are kept very low.
Vinification: Each plot is vinified separately in stainless steel tanks using native yeasts, with no added sulfites. The process includes gentle punch-downs, temperature control, and long maceration to extract maximum flavour and complexity.
Aging: The wine is aged in stainless steel tanks for 12 months, preserving its purity and mineral character.

On the Nose: The wine is expressive with aromas that reflect the schist soils, delivering pure, clean notes with depth and complexity.
On the Palate: A powerful yet elegant wine with rich tannins that are both smooth and sensual. The mouthfeel is balanced with intensity and persistence, making it a great example of Languedoc’s great wines.
Pairing & Cellaring: Les Bancels 2021 pairs beautifully with rich meats like beef or lamb shoulder with thyme, as well as truffle risotto or mushroom dishes. Best enjoyed between 2022 and 2032.
