The wine is round and silky, with powerful fruit flavours and a complex aromatic profile. The Mourvèdre expresses itself with remarkable balance, offering a glimpse into the wine’s incredible aging potential.

Pairing & Cellaring: Felgaria is perfect for pairing with game birds, pigeon, beef cuts, truffle pasta, or grilled lobster. With long-term cellaring potential, it evolves beautifully, revealing the richness and complexity of Mourvèdre at its peak.

Frequently Asked Questions

What is the benefit of isolating Mourvèdre and Syrah during fermentation?

Fermenting Mourvèdre and Syrah separately allows the unique qualities of each grape variety to shine. This process lets winemakers tailor the fermentation to suit each variety, enhancing their individual characteristics before blending for a more balanced and complex wine.

Why are gentle punch-downs used during fermentation?

Gentle punch-downs involve lightly submerging the grape skins back into the juice during fermentation. This technique extracts flavour, colour, and soft tannins without over-extracting, resulting in a well-rounded wine with elegance and depth.

What’s the difference between aging wine in barrels and amphorae?

Aging in 500L barrels softens the wine while introducing subtle complexity, without overpowering it with oak flavours.

Amphorae, made from clay, allow for slow oxygenation similar to barrels but without adding oak influence, preserving the purity and freshness of the fruit.
