Harvest: The grapes are carefully selected for optimal ripeness, with yields kept exceptionally low. Hand-picked and placed in small crates.
Fermentation: Native yeasts are used for isolated fermentation of the Mourvèdre and Syrah separately, with no added sulfites. The process is carefully controlled with gentle punch-downs and temperature management.
Aging: Aged for 12 months in 500L barrels (non-new) or amphorae, providing a unique and subtle texture.
