Vieilles Canailles - AOC Saint Chinian Rouge 2020
Wine Details & Winemaking
Type: Red
Alcohol: 14%
Vintage: 2020
Size: 750ml
Closure: Cork
Varieties: 100% Carignan
Structure: Full-bodied, with well-integrated tannins and a long finish
Terroir: The vineyards, planted in 1902, are located at an altitude of 250m and are rooted in clay-limestone soils, ideal for growing Carignan. The vines are cultivated using traditional, sustainable practices, without synthetic chemicals. The vines are pruned using the gobelet method and all work in the vineyard is carried out manually.
Harvest: Grapes are hand-harvested in small crates with a meticulous sorting process to ensure only the finest fruit is selected. The yield is very low at just 22 hl/ha to maintain quality.
Vinification: A traditional winemaking approach is used with full destemming and remontage (pumping over). The wine is aged for 18 months in oak barrels of 350L capacity.
Aging: One year in stainless steel tanks to allow for further refinement.
Tasting Notes / Food Pairing & Cellaring
On the Nose: Vieilles Canailles 2020 offers a complex bouquet of ripe dark fruit, leather, and spice, with earthy undertones that add depth and character.
On the Palate: The wine is full-bodied, with vibrant acidity and silky tannins, offering flavours of dark berries, subtle herbs, and a touch of oak. It is well-structured and balanced, with a long and persistent finish.
Pairing & Cellaring: Serve at 17°C, decant for about an hour before tasting. This wine pairs excellently with grilled meats, slow-braised dishes, and aged cheeses. Its long-term aging potential makes it a perfect candidate for cellaring, where it will continue to evolve and develop for many years.

Frequently Asked Questions
The gobelet method is a traditional vine training technique where the vine grows as a low, bushy shrub without a central trellis.
This method helps create a natural canopy that protects the grapes from excessive sunlight while allowing for optimal airflow.
It encourages the vines to develop strong, balanced growth and enhances the quality of the fruit by reducing the risk of disease and ensuring better concentration of flavours.
Full destemming refers to removing the grape stems before fermentation, leaving only the fruit, which helps reduce the harshness of tannins and ensures a cleaner, smoother wine.
Remontage, or pumping over, is a process where the wine is periodically pumped over the solid grape skins (the cap) during fermentation.
This helps extract colour, flavour, and tannins from the skins, contributing to a fuller, more complex wine with better structure.
Aging wine in oak barrels imparts subtle flavours and aromas such as vanilla, spice, and toast, depending on the type of oak used.
The oak also allows small amounts of oxygen to interact with the wine, which helps soften tannins, refine the texture, and increase complexity.
