Varieties: 65% Grenache, 30% Syrah, 5% Mourvèdre

Harvest: Manual harvesting in small crates ensures careful sorting of the fruit. The vineyard's yield is limited to 28 hl/ha, which concentrates the flavours and maintains quality.
Vinification: Traditional winemaking with indigenous yeasts, full destemming, and gentle pump-overs.
Aging: In tanks for 10 months for the Grenache and Syrah, while the Mourvèdre is aged in 350L barrels to develop complexity.
Tasting Notes / Food Pairing & Cellaring
On the Nose: This wine presents subtle aromas of crushed red fruits and floral notes, such as rose, contributing to its elegance.
On the Palate: The wine is medium-bodied with soft, rounded tannins. Flavours include ripe damsons from Grenache, noticeable pepper and spice from Syrah, and a touch of garrigue from Mourvèdre. The finish is medium, with developing garrigue notes.
Pairing & Cellaring: This wine pairs well with grilled quail, roasted saddle of rabbit wrapped in bacon, or hearty cheeses wrapped in herbs.
It has a medium cellaring potential.
Serve at 18°C for optimal flavour expression.

Frequently Asked Questions
The traditional pruning methods of gobelet and cordon de royat help control the growth of the vines, ensuring better air circulation and sunlight exposure. This encourages even ripening of the grapes and promotes the development of more concentrated flavours.
These techniques also help maintain the health of the vines over time, resulting in a more balanced and sustainable vineyard.
Harvesting grapes in small crates minimizes the risk of crushing and ensures the fruit remains intact during transport to the winery.
This careful handling allows for better sorting of the grapes, ensuring that only the best, ripest fruit is used for winemaking. It also helps maintain the quality and freshness of the grapes, which is essential for producing high-quality wine.
Full destemming means that the stems are completely removed from the grapes before fermentation. This technique helps avoid the harsh tannins that stems can impart, resulting in a smoother wine.
Gentle pump-overs are used during fermentation to carefully mix the juice and skins, extracting flavours and colour without over-extracting tannins.
