Terroir: The vineyards are situated at an altitude of 300m, on clay-limestone soils that impart freshness and structure to the wine. The vineyards follow sustainable practices, with no herbicides, and employ gobelet and cordon de royat pruning.
Harvest: Hand-harvested in small crates, with a rigourous sorting process to select the best fruit. The yield is limited to 24 hl/ha to ensure high-quality fruit.
Vinification: Traditional winemaking with indigenous yeasts, full destemming, and a combination of pigeage (punching down the cap) and remontage (pumping over the wine).
Aging: The wine undergoes 18 months of aging in used oak barrels, followed by 12 months in tanks to refine its profile.
Tasting Notes / Food Pairing & Cellaring
On the Nose: Sortilege 2020 opens with aromas of dark fruit, blackberries, and subtle notes of spice, oak, and a hint of earthy garrigue.
On the Palate: The wine is full-bodied with well-structured tannins, offering a complex interplay of fruit, spice, and earthy flavours. The oak influence is gentle but adds depth and richness to the wine's profile.
Pairing & Cellaring: Best served at 17°C with decanting for about an hour before serving. This wine pairs well with grilled meats, braised dishes, and strong cheeses. It has excellent aging potential and will continue to evolve over the next decade or more.
