Terroir: The vineyard for Dentelle Noire 2019 lies on terraces with sandy and clay soils, covered by rounded pebbles, typical of the three terroirs found in the Tavel Appellation. These soils provide excellent drainage and allow the grapes to mature optimally in the Mediterranean climate.
Winemaking: The winemaking process for Dentelle Noire 2019 began with a cold maceration period of 48 hours to extract maximum aromatic potential from the Syrah and Grenache grapes. This was followed by alcoholic fermentation. After fermentation, the wine underwent a month-long maceration process, with regular pump-overs to ensure optimal extraction of flavours and tannins.

Frequently Asked Questions
Rounded pebbles help the vines thrive by storing heat during the day and releasing it at night, ensuring the grapes ripen evenly in the warm Mediterranean climate.
They also improve drainage, preventing waterlogging and encouraging deep root growth, which contributes to the wine’s vibrant and complex character.
Cold maceration involves chilling the grapes before fermentation to gently extract fresh fruit flavours, aromas, and colour without adding tannins.
Pump-over is a winemaking method where the juice is carefully circulated over the grape skins during maceration.
This ensures the flavours, colours, and tannins are evenly extracted, creating a wine with more depth, structure, and complexity.
