Terroir: The vineyard sits on sandy soils, covered with rolled pebbles, which enhance the natural drainage and heat retention properties, ideal for producing concentrated and aromatic wines.
Winemaking: For the 2020 Lirac Rouge, the grapes underwent a cold maceration period of about 48 hours to extract maximum aromatic potential. After this, fermentation began at low temperatures. The fermentation process was followed by an extended cuvaison (maceration), lasting a total of one month. The wine was then aged in tanks for a year before bottling, allowing it to develop its complex flavours and smooth tannins.

Tasting Notes / Food Pairing & Cellaring

On the Nose: This wine displays an aromatic bouquet of floral and spicy notes, reminiscent of the garrigue (the Mediterranean scrubland). Its scents are inviting, suggesting an array of herbal and earthy aromas.

On the Palate: Lirac Rouge is full-bodied and powerful on the palate, with a rich texture and complex flavours. The taste is defined by the prominent presence of Grenache, giving it a crunchy and robust finish. The wine's balance of fruit and spice makes it a very versatile red.

Pairing & Cellaring: This wine pairs well with a variety of contemporary dishes such as roasted farm chicken, beef tartare, or carpaccio. It is recommended to serve the wine between 15°C and 17°C to fully enjoy its expressive qualities. Given its structure, Lirac Rouge 2020 has excellent aging potential. Over time, it will develop more complexity and refined characteristics, making it an excellent wine for cellaring.

Frequently Asked Questions

What is cold maceration, and how does it impact the aromatic qualities of the wine?

Cold maceration involves soaking the grape skins in cold conditions before fermentation begins.

This process helps to extract delicate aromatic compounds, such as fruit and floral notes, without extracting too much tannin or colour.

How does an extended cuvaison (maceration) affect the wine's flavour and texture?

An extended cuvaison allows the wine to have more contact with the skins, which enhances flavour extraction, particularly tannins and pigments.

This process adds depth, structure, and complexity to the wine, giving it a more intense flavour profile and smooth tannins.

What role does aging in tanks play in the development of the wine’s flavours and tannins?

Aging in tanks for an extended period helps the wine to stabilize and integrate its flavours.

It allows for a more controlled, gradual maturation, softening the tannins and resulting in a smoother, more balanced wine.

The neutral environment of the tank ensures that the wine maintains its fresh, fruity character while also allowing for subtle complexity to develop.
