Terroir: The vineyards of La Rocalière are located on exceptional terroirs within the Tavel appellation, particularly on terraces made up of sandy, clay-rich, and rolled pebbles, with white limestone and sand. These soils are key to the unique character of Tavel wines, contributing to the vibrant flavours and rich texture of the wines.
Winemaking: The Tavel was made through a short cold maceration (about 24 hours), which helps to extract maximum aroma and achieve its beautiful ruby red colour. Fermentation took place at low temperatures (13°C to 18°C) to preserve the fresh, fruity character of the wine. The varietals were vinified separately to maintain their unique attributes, with Grenache contributing richness and fruitiness, Cinsault bringing finesse and length, and Syrah offering color and aromatic complexity.
Tasting Notes / Food Pairing & Cellaring
On the Nose: Expect vibrant red fruit aromas, such as raspberry, cherry, and strawberry, with subtle floral and herbal notes, reflecting the complexity of the blend.
On the Palate: Full-bodied yet fresh, this Tavel displays a nice balance of fruit and acidity, with a smooth texture and lingering finish. The wine is expressive, offering juicy red berry flavours, and a rounded mouthfeel due to the Grenache.
Pairing & Cellaring: Tavel is an excellent wine for warm weather and pairs well with a variety of dishes. It is perfect for serving as an aperitif, particularly in the summer, and complements white meats, fresh cheeses, and Provençal specialties like brandade and tapenade. It also pairs beautifully with Mediterranean and Asian cuisine. Best served chilled, between 12°C and 14°C. While it can be enjoyed young, it will also hold up well for aging.
